Beef or Lamb with Rosemary Crust

Serves 4

Ingredients

  • 4 fillets of beef or lamb
  • Olive oil
  • butter
  • salt, pepper

Crust:

  • 8 tbs fine grated bread crumbs
  • 8 tbs butter
  • 4 tsp grated Parmesan cheese
  • 1-2 twigs of rosemary
  • Method

    • Place bread crumbs, butter, parmesan cheese and rosemary in mixer and mix until you get an even texture.
    • Roll mixture into a thin disc between two sheets of GLAD Bake paper and place in a fridge for 20-30 minutes.
    • Heat some olive oil and butter in a frying plan. Fry the fillets quickly on both sides.
    • Take the crust from the fridge and cut pieces, the size of the fillets and place on fillets. Line an oven tray with GLAD Bake paper and gratinate in preheated oven 225 degrees Celsius for 5 minutes.
